Pumpkin Roll with Cream Cheese Filling
All of the flavors of fall wrapped up in a pumpkin roll

- 1 cup sugar
- 3/4 cup all purpose flour
- 1/2 tsp kosher salt
- 1 tsp baking soda
- 1/2 tsp pumpkin pie spice or cinnamon
- 3 eggs
- 2/3 cup pumpkin puree
Cream Cheese Filling
- 8 oz cream cheese room temperature
- 1 tbs butter melted
- 1 tsp vanilla
- 1-1/4 cup powdered sugar
- 1/2 tsp kosher salt
Preheat oven to 350 degrees and prepare a 15"x10" sheet pan with parchment paper and cooking spray. Mix all of the above ingredients in a mixing bowl til just combined. Pour batter into prepared pan and bake 15 minutes or til a toothpick inserted into center of cake comes out clean. Once done remove from oven. While cake is still hot, gently remove parchment paper with cake onto a flat, heat safe surface. Quickly and carefully roll up cake in parchment paper. Let completely cool with the seam side down. While cake is cooling prepare filling.
Assembly
Once cake has completely cooled off, very carefully unroll the cake. Evenly spread the cream cheese filling over the cake. Then gently roll cake back up with out the parchment paper. Place Pumpkin Roll on a flat serving dish and dust with powdered sugar.Enjoy!!
