Who doesn’t love a good hearty bowl of chili on a cold day? Well, here in the great state of North Carolina, we haven’t had a very cold winter, so you can bet that the first frigid weekend we had, my mom and I were preparing chili. It is a staple in our home as soon as fall arrives and especially on snow days or just when it’s plain COLD!!
My mom has always used hamburger and occasionally steak, which truly makes some of the best chili around, but this time I wanted to put a slightly healthy twist on it and use ground turkey. And I must say that I was pleasantly surprised at how good it turned out. Below, I’ll post the recipe. All we did was take her chili recipe and used turkey instead. Recipes are amazing that way. A little side note: I usually try to find beans and tomatoes that are sodium-free or low in sodium. Since my mom had some heart issues a couple of years ago we have tried to cut back. It is amazing the alternatives you can find now in the grocery stores. Plus, as so many cooks like to do, this way you can control the amount of sodium that goes in your recipe.
Turkey Chili
Ingredients
- 1 tsp olive oil
- 1 lbs ground turkey
- 1 tsp each salt and pepper
- 1 onion chopped
- 1 green pepper, optional chopped
- 28 oz tomato puree
- 6 oz tomato paste
- 14.8 oz diced tomatoes
- 15.8 oz dark red kidney beans rinsed
- 15.8 oz red kidney beans rinsed
- 15.8 oz cannellini beans rinsed
- 1 tsp cumin
- 1 tsp cayenne pepper
- 2 Tbs chili powder
- 1 pkg Carroll Shelby's Chili mix I like to use half the pack
- salt and pepper taste
Instructions
- Prep: In a large dutch oven, heat the olive oil. Add the turkey, onion, pepper, salt, and pepper and sautee and 7 mins or until cooked through.Now add all other ingredients and cook on low heat for about an hour so all of the flavors will incorporate together for a flavorful meal. On an added note, you can make this dish as hot or as mild as you like. Sometimes I'll add sriracha sauce to mine, or at least in my bowl when I'm serving those that do not like hot foods.Once done, enjoy one of the best meals you have had. You can serve this with shredded cheese, sour cream, diced onions. Also pair it with tortilla chips, saltine crackers or as we in the South like to do, serve with cornbread, a.k.a. hushpuppies
