September, October, and November! Who else loves the fall months? This, like a lot of other people, is my favorite time of year. The aromas, the vivid colors, the less humid and cooler weather, apple cider, bonfires, football games, times spent with loved ones. These are just a few of the things I love about this season.
With the fall months here it means pumpkin season is here too and who doesn’t just love Pumpkin Spice everything? Well, maybe not everything. Personal opinion, I do think some have gone just a little overboard on the pumpkin spice. I still love my pumpkin spice coffee from my favorite coffee shop. By the way, you have to try Creek Coffee if you are at Campbell University.
Since my mom and I run an in-home bakery one of the things we love to do this time of year is bake. The smells of cinnamon, apples, pumpkins, and spices wafting in the kitchen are just amazing. The smells for some, remind them of being back home or in their grandmother’s kitchen and I love to invoke those memories for others.
Below you will find a couple of my favorite pumpkin recipes!
Pumpkin Roll with Cream Cheese Filling
Ingredients
- 1 cup sugar
- 3/4 cup all purpose flour
- 1/2 tsp kosher salt
- 1 tsp baking soda
- 1/2 tsp pumpkin pie spice or cinnamon
- 3 eggs
- 2/3 cup pumpkin puree
Cream Cheese Filling
- 8 oz cream cheese room temperature
- 1 tbs butter melted
- 1 tsp vanilla
- 1-1/4 cup powdered sugar
- 1/2 tsp kosher salt
Instructions
- Preheat oven to 350 degrees and prepare a 15"x10" sheet pan with parchment paper and cooking spray. Mix all of the above ingredients in a mixing bowl til just combined. Pour batter into prepared pan and bake 15 minutes or til a toothpick inserted into center of cake comes out clean. Once done remove from oven. While cake is still hot, gently remove parchment paper with cake onto a flat, heat safe surface. Quickly and carefully roll up cake in parchment paper. Let completely cool with the seam side down. While cake is cooling prepare filling.
Cream Cheese Filling
- In bowl with hand held mixer, combine all of the ingredients til smooth.
Assembly
- Once cake has completely cooled off, very carefully unroll the cake. Evenly spread the cream cheese filling over the cake. Then gently roll cake back up with out the parchment paper. Place Pumpkin Roll on a flat serving dish and dust with powdered sugar.Enjoy!!
Notes
This week was the first time I have made the pumpkin roll and it turned out phenomenal. It’s not so sweet but full of flavor. I have made a yule log the past few years at Christmas and I must admit that the first time I was a little intimidated about rolling it up. But after that first initial time, it is relatively easy and I want to encourage you to try it. You will be amazed at how it turns out. Let me know in the comments if you try it and how it does.
Pumpkin Oatmeal Cookies
Ingredients
- 1/2 cup butter softened
- 1-1/2 cup brown sugar packed
- 1 egg
- 1 tsp vanilla
- 1/2 cup pumpkin puree
- 1 cup all purpose flour
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/4 tsp baking soda
- 2 cups old fashioned oats
- 1 cup dried cranberries optional
Instructions
- Preheat oven to 375 degrees and prepare a cookie sheet with parchment paper, cookig spray or a silpat. Sift together in bowl the flour, cinnamon, salt, nutmeg and baking soda and set aside. In a bowl with a hand held mixer, combine butter and brown sugar for 5 minutes or til light and fluffy. Add egg and vanilla. Blend in the pumpkin puree. With the mixer on low, gently add the flour mix. Stir in the oats and cranberries. Let mixture set in the refrigerator for a few minutes. Drop the cookies by rounded teaspoons onto prepared cookie sheet and bake for 12 minutes. Remove from oven and place cookies on a wird rack to cool. Once cool, drizzle with a glaze made from powdered sugar and a little milk. Or enjoy straight out of the oven while still warm.
Notes
Glaze: 1 cup powdered sugar and 1 tbs of milk. Mix till smooth. If lumpy add a little more milk.
These go perfect with a glass of milk or a cup of coffee!
I love the pumpkin oatmeal cookies. The perfect addition to a “Cup of Joe” or a cold glass of milk.
